Following up on my autumn/pumpkin ode I wanted to share one of the easiest most delicious recipes I love to cook: Pumpkin puree. This delicious treat will not only be ready super fast but will tie you a healthy alternative to have for lunch or dinner.
I used to be terrified of pressure cookers but when I moved to Spain and had to cook decent meals it became my life saver. Just make sure you clean it properly and pay attention to it while using it, never leave it unattended and you’ll be fine. Trust me, no one was more scared of it than me, now it’s my best friend in the kitchen. Specially if I’m in a hurry or just plain tired to cook for an hour.
Prep time: 5 minutes Cook time: 15 minutes Overall: 20 minutes to prepare
- 2 carrots
- 3 small potatoes (gives it a more consistent texture)
- 1 piece of pumpkin
- 1 quarter of an onion
- 1 garlic clove
- Half a broccoli head
- salt to tast
- left over sauce from meat stew (optional, if not available you can add pepper and a little bit of honey to give it a nice different flavour)
Wash and peel vegetables and dice them to pieces. Add water to the pressure cooker put all the ingredients in (except the left over stew sauce or honey if that’s what you are using) t’d leave it for 15 minutes after it begins releasing vapor.
Once the 15 minutes have passed it should look like this:
After just put all the ingredients inside a blender, make sure you include the left over stew sauce or honey if you are not using the sauce. Blend.
This is the perfect time to check if it needs more salt or pepper, etc.
I served it with a little bit of grated manchego cheese just to give it an extra “ump”.
